Lorna, I actually make chili without tomatoes or tomato paste sometimes.

I use ground pork sausage for this recipe but basically you make up a spice mix of good chili powder, cumin, garlic powder, kosher salt to taste, and a little bit of sugar. Mix it well and then mush it into the raw sausage or ground beef. Let it sit in your fridge or at least an hour.

Then sauté some onion and garlic in olive oil. Add the sausage mix and cook over medium heat til done. Add several cans of good pinto and kidney beans (I use Eden Organic...they're in BPA free cans) if you're using Eden beans don't drain them just dump the whole cans in. Stir thru and taste. You'll need to add more chili powder, cumin and salt. If you like a juicier chili, add a little beef broth but make sure if you do that you wait to add more salt to the mixture. Simmer and voila! Chili.

Coming from Cincinnati, Skyline and Gold Star chili restaurants have the biggest rivalry over who has the best Cincinnati-style chili. Both restaurants were founded in the 1930's by Greek (?) immigrants, who created their own recipe for their respective chilis. I like Skyline chili the best. I wonder what George liked while he was growing up in this area.

C´est la panique!

I had invited this couple and one other person to my house (before xmas, you know the kind of invites you do and not actually mean it), but forgot all about it. Now they are coming tonight…and I have nothing planned.

If I get entrecôtea & potatoes, maybe with spring onions – is it too simple?

If I grill the meat. Do the sliced potatoes in a pan with oil, salt, pepper, onion.

Good god I have only one spring cabbage in my fridge and bag of citrons!

Salad I can manage, cheese plate for dessert or chocolate (I have many boxes from xmas but unfortunately there is like one or two left in each of them)?

Jeez, send me some casamigo bottles for apero and it all takes care of it self! Fast. Very Happy

That sounds fine, I like it. As for the dessert arrange the cheese on a platter intermingled with the few chocolate pieces you have. It is all in the presentation. They will never know!

Tonight:

Lemon sole with butternut squash, broccoli, onion, chili chips and feta cheese.

Avocado, tomato, king prawns, corn salad as starter.

White wine.

Dessert: A movie. Hopefully good one: Brutti, sporchi e cattivi. Very Happy

(I´d really like to know a good recipe for butternut squash)

Last time I made jerusalem artichoke soup. It´s good, but maybe needed some celery in it too, whick I didn´t have. The taste is mild.

salmo trutta pie (8-10 people)

half of kg gravlax sliced (I use more, like 700g)
1 kg-1.5 kg russet potatoes
6 eggs
3 cups cream ( for lighter version use milk or water or white wine)
2 onions
butter
white pepper
salt
1 cup fresh dill

Bring potatoes to boil about 10 minutes.
Then peel and slice them. Sauté onions.
Butter a baking dish and layer potatoes and gravlax, sprinkling each layer with chopped dill, sautéed onion and pepper.

Whisk together eggs and cream, pepper and (dill butter).
Bake until golden on top, bubbling around the edges, about 1 hour. Serve warm with green salad.

Homey but you can cut nice squares so it looks quite elegant.

This goes well with the trutta pie, before or after:

Peeled and sliced pomelo about 1.5 cm thick + chopped pistachious + honey (and yogurt).

This is what my mother-in-law makes for me all the time, just scrumptious

EASTER ITALIAN RICE PIE

1 c. cooked rice
8 eggs, beaten light
2 lbs. Ricotta cheese
2 c. sugar
Juice of half lemon
1/4 tsp. cinnamon
1 tsp. vanilla
1 (10-12 inch) pie crust


Oven temperature at 350 degrees, baking time is 1 hour. In a bowl, mix rice, beaten eggs, Ricotta, sugar, lemon juice and cinnamon. Add vanilla. Line pan with crust. Fill with rice mixture. Bake until firm in moderate oven for 1 hour. Let pie stay in oven for at least 1 hour after it's done. Enjoy!

Oh yum, that sounds lovely. My mum has a similar recipe, but using spaghetti instead of rice. Weirdest thing we ever ate when I was a child, but it tasted great!

Oh my goodness . Last night we made margaritas with Padrone tequila ,fresh lime juice and light algave . Shake shake shake over ice . Rimmed the glass with pink Himalyan sea salt .Simple but oh so good . Very Happy

I made Nevada cocktails last night . Where I went wrong was I put a slice of lime on the rim of the cocktail glass as a garnish . I think a strip of lime zest would look better and would be more in keeping with the retro cocktail style. He he heee.

Ladies, I'm looking for your input.
I just finished a 5 day steroid (Medrol) dose pack prescribed by my orthopedist for temporary relief from bursitis, which he said is common for hip replacements. What I experienced while taking it was complete relief from ALL pain, joint and muscle. Having suffered chronic pain in my legs for the last couple decades, you can imagine how much younger and more vital I felt! I hoped it would have a lingering effect, similar to a cortisone shot. It does not.

But it did get me to researching inflammation and its effect on the body. My request is this - has anyone reading this actually went on an anti-inflammatory diet or does anyone know of natural remedies that have tangibly worked to relieve the joint/muscle pain associated with it? I would be deeply grateful for any input you may have.

I've emailed you Lakin....

Would it be useful to look at the "Help for Arthritis" type of web sites to look at the nutritional guidelines.
I know some foods can trigger bad attacks of Arthritic pain and it may be the same type of thing.
Does Massage or Acupuncture or Reiki or similar types of natural healing help at all ?

Jo, massage is great, but cost prohibitive to have it done on a regular basis. Don't know of any acupuncture or Reiki practitioners in my area. But you got me started on a different vein of research, so we'll see where that leads.

Years ago I found a married couple who practised natural healing....not hands on but hands just over the body....for a dear friend with chronic pain. It helped her.
I've tried Reiki too....seems beneficial.

Re the cost....I'm a great believer in spending money on helping my
body or mind if I have health issues....I spend enough on property and car maintenance, so why not on my body ! Lol

Lakin--I've spent the past few months pretty sick and was finally diagnosed with ulcerative colitis. The typical meds they give you for this just make me sicker so I've been doing tons of research on natural remedies.

The first thing I would send your way is Bosweillia. It is an Ayurvedic Anti Inflammatory and it is a miracle. It comes in pill form and you need to be sure you get one that has 65% Bosweillia in its content. I take 3 a day--my potency is 301 mg each dose.

The thing about Bosweillia is that it doesn't have any of the horrible side affects that typical pain pills have--it doesn't make you sleepy and it doesn't damage your internal organs, like your kidneys or liver. I have a really bad knee that needs replacing. I used to have to stand, then wait a bit to walk, with a limp. That pain is gone. I'm now doing 2 hour cardio workouts and walking 3 miles a day.

My sister had a knee replacement 9 months ago and her other knee is in bad shape. She finally started taking Boswellia and has had the same results. A friend with a horrible back condition who's lived on Vicodin for years is now on Boswellia and she's no longer taking Vicodin.

Second thing for you to consider: Once I was diagnosed with my problem, I chose to go gluten, dairy, sugar, egg, soy, corn and peanut free to give my system a break. I believe that has also contributed to the pain relief I've felt in my body as a whole. I used to have eczema. It's all gone now. As I said, the aches and pains I felt throughout my body have diminished substantially. And this is in spite of being in a severe state with the Ulcerative Colitis and on a huge dose of prednisone which is reeking havoc on my body at the same time.

If I were you I'd cut gluten and dairy first and just see what happens. Everyone always says, what do you eat, when they see what I've cut. There is LOTS of food out there and the other really amazing side affect is that weight is just dropping off me in all the places I've had trouble with in the past.

So those are my two cents my dear!

Wow!!! I'd say that's more than just TWO cents! And def worth a million if it works for me, too. Thanks, Oofie. I PMed you back. I've already been considering eliminating wheat, so this just strengthens that decision. I'll let you all know how it goes. Am pretty excited! I just KNEW if I appealed to my sisters on COH I'd reap in spades. You guys are a real goldmine of information, wit and wisdom! Thanks y'all!

A friend of mine who had her knee replaced a year ago, then fell awhile back and damaged her one good knee has started taking a vitamin from Swisse that helps with inflammatory and bone strengthening - she has taken one a day for 3 weeks and says that for the first time in forever, no aches and pains in any of her knees or back - its newish to the market, will get the name if you wish to try it.

Thanks Silly girl for link - I can vouch for ginger, it is some kind of miracle drug, has helped me out heaps when I need it. Tumeric too can do amazing things for your body.

Lakin - one of these is what my friend takes, Green Lipped Mussel - yep sounds weird I know. Im certain that she used the the one called Joints and was happy with that too but switched about a month ago - maybe something to look into, if the Bosweillia is not your cup of tea.

Ingredients:
1 cup brown lentils
1 cup basmati rice
1 cup uncooked pasta (small shells or elbow macaroni is best)
2 large onions, diced
4 cloves garlic, minced
2 tablespoons oil
1 (400 g) can chopped tomatoes
1/4 teaspoon crushed red chili pepper flakes (or more to taste)
salt and black pepper

Directions:
Cook the lentils in just over a litre of salted water.

Bring to a boil, reduce the heat and simmer, covered, for 15-30 minutes, depending on the type of lentils you are using.

When the lentils are quite tender, add the rice to the lentils and continue simmering until the rice is cooked, adding water if necessary.

Cook the macaroni in a separate pot.

Rinse and strain when done.

Meanwhile, fry the onions and garlic in the oil until golden.

Add the tomatoes, chilli flakes, salt and pepper to taste and let it bubble for 10-20 minutes or until thickened and sauce like.

You can now blitz the sauce in a food processor until smooth or just leave as is.

Mix the lentils, rice and macaroni together in one pot.

Place some of the lentil mixture on each plate and top with tomato sauce.

Sprinkle with more hot chili powder or salt and pepper, if desired.
